The Kindest Cookies

I wouldn’t blog about something that wasn’t wildly delicious, so hear me out friends. I served these babies up to my fiancé, family, friends, fellow bloggettes, and coworkers and no. one. knew. the. difference. I know, it’s crazy right? 

I’ve come to learn that you don’t need to use eggs and milk and animal products to make your food still taste amazing. it’s a marvelous discovery because 1) I love food. 2) I love being kind to my body. 3) I love making good choices… like excluding animal products from my diet!

So preheat your ovens, roll that dough, and leave out the guilt. These cookies are sure to be your new favorite recipe!

What you’ll need:

  • 1/4 Cup of Unsweetened applesauce (replaces the egg and great for rising)

  • 1/4 Cup nut milk of your choice, I used coconut milk

  • 1/2 Cup Earth Balance Vegan butter. Or coconut oil (as long as it’s formed, this can replace butter).

  • 1 1/4 Cup Brown Sugar

  • 2 Tsp. Vanilla Extract

  • 2 1/4 Cup Flour

  • 1 Tsp Baking Soda

  • 1/2 Tsp Salt

  • Dump in some Vegan chocolate chips, I would say about two cups but you measure that sweetness with your heart. You can find some awesome vegan chocolate chips here and here.

The Breakdown:

  • You’re going to start by setting your oven to 375 degrees.

  • Grab a mixing bowl (you’re doing great).

  • Plop the wet stuff in. Followed by the dry stuff.

  • Whisk (you’re almost there).

  • Fold in the heavenly cocoa pyramids.

  • Roll into balls, come on get those hands dirty.

  • Place on the sheet and pop those suckers in the oven for 9 minutes. (Keep an eye on it though, I think I had them in for 8 but 9 just seems right.)

  • Pull out with an oven mitt, we don’t need third degree burns.

WHAMO.

Cruelty free, dairy free, absolutely delicious, kicks your grandma’s cookie recipe in the rumpus, CHOCOLATE CHIP COOKIEEEEEES.

It’s that easy to substitute with plant based ingredients, even I could do it.
